Potato and Herb Bisque

Servings:

4-6

Cooking Time:

Prep: 30 minutes, Cook: 60 minutes

Ingredients:

  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 3 Shallots, minced
  • 4 medium Onions, diced
  • 1 tbsp Garlic, minced
  • 4 large Potatoes, peeled and diced
  • 4 cups Chicken broth
  • 1 tsp Oregano
  • ¾ teaspoon Marjoram
  • 1 Bay leaf
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat the oil and butter in a heavy soup pot.
  2. Add the onions, shallots, and garlic and saute until just soft.
  3. Add the potatoes, broth, and herbs.
  4. Bring to a boil. Reduce the heat and simmer 45 minutes (or until the vegetables are tender). Check the seasonings.
  5. Serve warm garnished with the green onions.
