Pineapple Stuffing

Cooking Time:

Prep: 5-10 minutes, Cook: 60 minutes

Ingredients:

  • ½ cup margarine
  • 1 cup white sugar
  • 4 eggs
  • 1 20 oz. can crushed pineapple, drained
  • 5 slices potato bread, cubed
  • Can substitute 5 slices of white bread

Instructions:

  1. Preheat oven to 350° F (175° C) and grease a 9 inch baking pan.
  2. In a mixing bowl, cream margarine and sugar.
  3. Beat in the eggs one at a time.
  4. Add the pineapple and bread cubes to the mix.
  5. Bake at 350° for 1 hour.
  6. Let it cool for about 5 minutes before serving to firm up.

A somewhat common recipe, but I use it myself as it goes particularly well with ham and a nice caramel-pineapple glaze.
